Blender Pancakes
Here is a unique, easy, very tasty, and extra healthy way to enjoy pancakes. This has become our new way of having pancakes during the week. The overnight soaking helps make the pancakes all the more healthier. Enjoy with eggs & sausage on the side and pure maple syrup or jam. 

1 cup plain yogurt
1/2 cup water
Note….you can replace yogurt & water with 1 1/2 cups of kefir
2 T Oil (we use refined coconut oil)
1 t. Vanilla Extract
1.5 Cups of whole grains (we use 1/2 cup each of oats, wheat, & buckwheat….could also use brown rice)

Put all ingredients in to blender and blend for 3 minutes. Let soak overnight or up to 24 hours. In the morning, just before cooking, add 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, & 1 egg. Blend to combine. Cook on griddle as you would regular pancakes.
