A new family favorite of ours! Lisa made this soup for a potluck meal at church last Sunday. Soups are normally not as popular in such potlucks, but this one was devoured.

1 soup chicken (chicken back)

1 T chicken boulion (or to taste)

1 bunch of swiss chard chopped

1 small onion chopped

2 carrots chopped

2 cups of cooked brown rice

Salt & Pepper

Instructions:

Put soup chicken in pot with water to cover. Bring to simmer & let simmer for atleast 1 hour or until cooked through. Remove chicken and allow to cool slightly & remove all meat. Strain broth if desired and then place chicken meat back into pot with the broth. Season the chicken stock (broth) with boulion and salt & pepper to taste. Add vegetables to the stock and allow to simmer for 20-30 minutes (atleast until carrots are soft). Add brown rice just before serving, making sure rice is warm all the way through.
