1.25 lbs of Zucchini (approx. 6 small)
salt & pepper
1 non-gmo egg
2/3 cup flour
Oil for deep frying (we use non-gmo, expeller pressed coconut oil)
Trim the ends off the zucchinis and shred using the large holes on a box grater or using a food processor. Place zucchini in a colander set over a bowl and sprinkle with 1/2 teaspoon of salt to draw out moisture. Let sit for 1 hour. Remove from a colander, squeezing out excess water. Add the egg and then pepper to taste. Mix well. Stir in the flour. Pour oil to 1 inch depth in deep heavy sauce pan. Heat to 375 on stovetop. Working in small batches, drop zucchini by table spoons into the hot oil. Fry, turning once until golden brown on both sides – 1-2 minutes total. Place on paper towels to drain. Enjoy!!
